VINIFICATION AND AGEING
Harvest: mid/late October with manual harvesting of the grapes with
selection of the best bunches
Drying: natural drying in fruit cellar for 3/4 months.
Vinification: soft crushing of destemmed grapes in the months of January
and February
Fermentation: at a controlled temperature of 18/20°
Fermentation time: about 30 days
Ageing:
• 30 months in Oak barrels

TASTING NOTES:
Ruby red colour, the wine reveals a rich bouquet of fruit jam, red fruit,
chocolate and vanilla.
Spicy nose of black pepper, enhances components of herbs of the field.
Well bodied palate with soft and well balanced tannins. Best served with
great meats, game and mature cheese.
