CAMBRIDGE 13 ans 2005 STCE 62,5%

With a fairly high ester content of 550 to 700 grams per hectolitre of pure alcohol, this cuvée, christened STCE, is one of the many marks produced by the Long Pond distillery. In terms of aromas, this 2005 bottling, which stands out for its stripped-back classicism, is delicately woody, luscious (rosemary) and spicy (clove). On the palate, after an initial sequence overflowing with exoticism, flavours of sugarcane and cane sugar altruistically and irreversibly take hold of the flavour palette.

Profile: the very camphoric initial nose is also delicately woody (floating dust), luscious (savory) and spicy (clove). Allowed to breathe, it reveals notes of citrus fruit (mandarin, lime), before becoming medicinal (mustard poultice). The distinguished attack is exotic, roasted and hot (paprika). The mid-palate reveals flavours of warm cane sugar and heady florals. The well-balanced finish is characterized by sugarcane. This is livened up by chocolate drops, apricot and walnut.
